Fix test_langchain to use explicit stop strategy
...
The default stop strategy changed to TurnAnalyzerUserTurnStopStrategy,
which requires actual audio analysis. Use SpeechTimeoutUserTurnStopStrategy
explicitly since this test is not testing turn detection.
